Fill in the Blank Friday...


It's that time again for Fill in the Blank Friday with Lauren over at the Little Things We Do!

1.   My current obsession is diet Pepsi. It has been my lifesaver this week! Honestly I'm trying to give up pop but right now its not working.

2.   Spending time with Paul makes me happy. We don't get to see each other that much so when we do spend time together it means more!

3.  My greatest strength is my ability to adapt to changes. Its fun to be able to fly by the seat of your pants and still have a good outcome. 

4.  Worrying what others think is my greatest weakness.

5.  My life is fantastic. I am blessed on so many levels! 

6.  In high school I was an athlete and a singer.

7.  When I'm super tired I get goofy!

You Know What...It's Ok!


It's OK..

...that I would rather go workout then stay home and clean my apartment

...that secretly I want time to move faster so the wedding will be closer!

...to change my Scentsy wax weekly because I love all my different scents!

...to be EXTREMELY excited about my first blog giveaway!

...to eat McDonald's an hour before working out...oops!

...that my Fantasy Football team has lost two games in a row and continue to worry because this week I play my fiance and he is undefeated

...to wish I had more time to do fun things like crafting!

...to be really really happy that I can sleep again at night! Bye bye cold!

...that I'm both excited and nervous about going to the dentist on Monday

...that even though I've been talking about it for weeks, I have not had my first Pumpkin Spice Latte of the season.

...to be slightly frustrated that our Pastor cancelled on us for marriage counseling because she forgot she scheduled us and instead scheduled two other things the same night.

A Bunch of Sickies

I need millions of these...


Instead of having a wonderful weekend enjoying the nice weather both Paul and I were stuck at home fighting over the box of Kleenexes. Sounds fun right?!?!?

I was really looking forward to starting my workout plan this week, especially since the new gym finally opened up. But instead I'm suffering from a stuffy nose, soar throat, achy body and a pounding headache. 

I'm hoping a little of this will help and I will be back to normal in no time!

Fall Blog Challenge - Looking Forward To...

Yes, Pumpkin Spice Lattes, Nebraska football games, and pumpkins are at the top of my list for things I look forward to for Fall. But there is one thing that surpasses them all...

This is one part of Nebraska that I could never give up. 
The trees are so pretty and I love the crunching of leaves when you walk. 
And there is nothing better then raking them all up into a big pile and jumping in them. And don't judge me but yes I still do that and will continue to do that until I can't jump anymore!

Organization At It's Best

With a wedding coming up now is the time to begin organizing my life! 

I kept noticing the buzz that the Erin Condren Life Planners kept making all over my twitter and in the blogs I read. I didn't think I wanted to spend the money and I felt that I could find something similar in the stores. Come to find out I couldn't find a planner even close and the more buzz I saw the more I wanted one bad! Luckily Jenn shared a code with me to save me 50% on the planner!

I checked the status of the planner every day! I couldn't wait until it shipped. 

Yesterday I FINALLY got it in the mail and I have most of it filled out. I am so excited about becoming more organized and I know this planner will play a HUGE role in my wedding planning.

It's Ok


It's ok...

...that I haven't worked out at all this week.

...that i have checked my status on my Erin Condren Life Planner every 2 hours.

...to listen to Disney music on Spotify while I'm at work

...to have a messy desk and not feel motivated to clean it

...to neglect Pinterest for an entire week. 

...to have baby fever after spending some time with my best friend's baby.

...to tell the gym that you are moving when you cancel your membership only to really be leaving because you found a better gym.

...that I have looked forward to this week with all the new shows on for quite some time!

...that my fantasy football team had the worst loss last week.

...that I still don't know exactly what I'm doing with my Fantasy Football team.

...that I'm extremely excited to start kickboxing and boot camp at my new gym only to be scared that they will have to peel me off the floor when I'm done.

...that I haven't been original on my blog lately and have just been doing link ups. (Not enough time)

Fall Blog Challenge - Fall Decor


Day number 4 of the Fall Blog Challenge. 
Today's topic is Fall Decorating!

Decorating is so much fun! Especially for the holidays and new seasons.
 Sometimes I covet more space just so I can get more decorations. Lately I have been finding a lot of cool ideas for DIY Fall Decor. Hopefully when I find some time I can get around to making a few of these to put around my house!

If you missed the first post of this blog challenge I talked about how I go with a few of my coworkers every year to pick out pumpkins. On Monday, the pumpkins were finally ready!

I love Cinderella pumpkins which are the ones on the left and the white pumpkins! The place we get them from has a HUGE selection of different kinds of pumpkins and gourds.

Halloween

I do look forward to future Halloweens. I can't wait to have kids and begin traditions with them. It will be so much fun dressing up and going trick-or-treating. We don't get trick-or-treaters right now because we live in an apartment but when we finally buy a house I look forward to handing out candy too!

Fall Traditions

FOOTBALL! Even before Paul and I were together I would wake up and watch College Game Day at 9:00 in the morning on Saturdays. It is like cartoons for adults who love football. Now Paul and I wake up every Saturday to watch College Game Day and either get ready for tailgating or on away games make some yummy food and watch football all day!

Picking Pumpkins For the last three years a few of the ladies I work with and I go and get pumpkins during our lunch. This has become a little tradition of ours and I honestly look forward to it every year. 
This is our pumpkin pick from last year.

Pumpkin Spice Lattes When Starbucks releases the Pumpkin Spice Latte in the fall it makes Fall official for me. It would not be fall without pumpkin coffee :)

I have to begin and apologize for lacking on my blogging this week. Other things have been demanding my time which takes me from the one thing I enjoy doing...so for that I'm sorry!

5.  Something totally dumb and ridiculous that I love is watching reality TV shows. There really isn't a point to them but they suck me in and I can't stop watching.

6.  If I could, I would pack up my apartment and find a bigger place. Paul and I have accumulated too much stuff and we are starting to feel a little cramped. 

7.  I rather like cold pizza for breakfast.

Sprint Car Racing

Nothing is better then a dirt track race and a cool night.
I am no means a girly girl and love getting dirty. When Paul and I first started dating he was working on his friend Jack's sprint car.  I can remember every weekend being at the dirt track watching Sprint Cars. This year we have been a little too busy to enjoy the dirt on our faces. But last night we managed to find a little time.

My favorite part is watching the races from the pit. I get to be up close and personal to the action, this includes the DRAMA! Yes there is drama in racing and there is nothing funnier then watching a bunch of grown men fight like teenage girls.

Where Were You?

Watching the video from 10 years ago today makes 9/11/2001 feel like yesterday. I was sitting in Mr. Anderson's World History class. As we were walking in the news was covering the first hit on the World Trade Centers. Just as the bell rang and we sat down the second plane hit. All of us were speechless. The entire day everyone seemed to be numb. All I could think was...did this really happen??? 

I will never forget...

Filling in the Blank Friday

1.   Somewhere someone is  enjoying a relaxing day off while I on the other hand am working on Friday. I miss my Fridays off!
 
2.  Pinterest  is/are my muse.

3.  It would suck if  the internet  was no more because,  I would not know how to exist. Life would end for sure if Twitter and Facebook were gone!

4.  The beautiful weather and the fact that it is Friday  are my favorite things about today.

5.  Life is kind of like   a puzzle. You start with one piece and continue to put them together until you come out with a beautiful picture.

6.  If I could have anything I wanted I would want to have all my student loans paid off and be debt free.

7.  A funny thing happened the other day...  when Bella got sick. Paul decided to treat her like the princess she is (the picture says it all)
And yes she sat there all day and soaked up the attention...like humans do.

Cream Cheese Chicken Enchiladas

I'm loving my recipe board and Pinterest and finally got around to making my first recipe!

Paul and I love Mexican food and I usually do a pretty good job making enchiladas but this recipe is WAY better then any other thing I have made before.

Here is the recipe
(taken from here)

Ingredients:
5 oz. reduced fat cream cheese, softened
1/4 cup light sour cream
10 oz. can of enchilada sauce
1 cup shredded cheddar cheese, divided
1 cup shredded monterey jack cheese, divided
2 cups cooked shredded chicken
1 cup frozen corn kernels, thawed (canned corn works just fine, but drain it first)
4 oz. can diced green chiles
1/2 tsp chili powder
1/4 tsp cumin
Salt and pepper
4 scallions, thinly sliced
8 (8-inch) whole wheat tortillas

Directions:
Preheat the oven to 325 degrees. Spray a 9×13 dish with cooking spray.

In the bowl of your mixer cream together the cream cheese, sour cream, and 1/2 of the enchilada sauce. Stir in 1/2 cup 
of each type of cheese.

In a second bowl toss together the chicken, corn, cumin, chili powder, salt and pepper, green chiles, and half of the scallions. Add the chicken mixture to the cheese mixture and combine well.

Spread about half of the remaining enchilada sauce in the bottom of the baking dish.

Spoon the filling into each tortilla, roll the tortilla up, and place in the baking dish with the seam down. 


Pour the remaining enchilada sauce over the top of the filled tortillas and sprinkle with the remaining cheese. Bake for 20-25 minutes or until hot and bubbly. Sprinkle with the remaining scallions and serve.
